Recipe: Jerk Chicken


Chicken Legs - 4 LBS - cut in half
Vinaigrette Salad Dressing: - 3 Teaspoons
Brown Sugar: 1/2 Teaspoons
Olive Oil - 1 teaspoon


[1] Clean and cut chicken and place in a bowl
[2] Spoon in 2 teaspoons of WCP Jerk Seasoning, add the vinaigrette dressing, the brown sugar and rub in thoroughly.
[3] Refrigerate overnight or for 8 hrs.
[4] After marinading preheat oven at 375 degrees
[5] Place the chicken on a non-stick baking pan with a sheet of parchment paper
[6] Mix together the remaining 1 teaspoon of vinaigrette dressing, 1 teaspoon of olive oil and 1 teaspoon of Jerk Seasoning in a small bowl.- [ to be used for basting ]
[7] Bake for 30 minutes then lower the heat to 275 degrees
[8] Bake at low temperature for 35 minutes [8] Baste or brush on the Jerk mixture at the 35 min mark, 40 min mark and the 50 min mark - Its own juices can be used with the mixture also.
[9] Total baking time is 108-110 minutes with the basting.
[10] Remove from oven and serve.
